Ingredients:

1 head of Romaine lettuce
¼ cup black olives, sliced
½ cup black beans, drained
½ cup cooked corn, drained
½ cup shredded cheese (your choice)
½ cup colorful tortilla strips
Optional Garnish: Sunflower seeds, Pumpkin seeds

Dressing:

3 Tbsp Olive Oil
3 Tbsp Rice Vinegar
2 Tbsp Sriracha Ranch Gourmet Dip Mix (to taste)
Optional: Dollop of Sour Cream

In a small bowl, mix together the olive oil, rice vinegar, sour cream and Sriracha Ranch Dip Mix (you can adjust how many tablespoons of dip mix you add, based on how much flavor and spice you want). Once it’s fully blended, set aside.

Wash the head of lettuce and then chop finely and put into a large bowl (so you have room to stir).

Add all of the other ingredients, with the exception of the tortilla strips. Mix everything together well and serve onto two plates.

Drizzle the Sriracha Ranch dressing on top of the salad mix.

Garnish with the tortilla strips and seeds (optional). This also works well wrapped in a tortilla wrap.
