Recipe Inspired by:
1 lb. boneless chicken breasts (or tenders), cut into small bite sized pieces (1/2-inch by 1-inch)
3 Tsp olive oil
1 ½ Tbsp Cucumber Dill*
3 Tbsp Panko bread crumbs
2 Tbsp Parmesan cheese
Olive oil cooking spray
* This recipe works well with the other gourmet dip mixes as well, so you can choose your favorite
Preheat the oven to 450°.
In a bowl, mix the chicken with the Cucumber Dill. Massage the chicken with the spices thoroughly.
In a zip lock bag, add the Panko bread crumbs and the Parmesan cheese and mix it up. Then add the chicken to the bag. With the bag sealed, squeeze the bread crumb mix onto the chicken multiple times.
Spray a baking sheet with cooking spray.
Lay the breaded chicken nuggets on the baking sheet in a single layer.
Spray the top side of the chicken with cooking spray.
Bake for 8 minutes on each side.
Serve immediately.
Optional: Prepare a Cucumber Dill using the classic recipe (with sour cream) and use it as a dipping sauce for the nuggets.
