Cilantro Lime Chicken
1.5 lb. boneless chicken breast
¼ cup lime juice
2 Tbsp olive oil
¼ cup fresh cilantro
1 red, green or yellow pepper
Pinch of salt
Avocado Mash:
4 ripe avocados, diced
2 Tsp Chipotle Chile Gourmet Seasoning Mix (or to taste)
3 Tbsp lime juice
½ Tbsp red wine vinegar
1 garlic clove, minced
Pinch of salt
4 to 6 wraps

  • In a small bowl, add the lime juice, olive oil, fresh cilantro and salt. Whisk until mixed.
    Put the chicken breasts into a large zip lock bag and marinate for 15 minutes.
  • Cut the pepper into thin slices.
  • Preheat a pan to medium, medium-high heat. Cook each side of the chicken for 4-6 minutes, until the chicken is no longer pink. Part way through, add the sliced peppers and sauté. Remove and let sit.
  • When the chicken is a bit cooled, cut it into slices.
    To make the avocado mash: In a bowl, cut up the avocados and gently mash them. Then add in the Chipotle Chile seasoning, lime juice, red wine vinegar, minced garlic and salt. Gently toss to mix.
  • Into each wrap put some of the avocado mash, pepper slices and chicken slices.
